Gluten Free Triple Chocolate Chip Cookies

Triple Chocolate Chip Cookie Recipe

You will need:

  • A baking tray
  • Greaseproof paper
  • 4 Large Eggs
  • 1/2 tsp Xanthan Gum
  • 1 cup White Chocolate Chips
  • 1 cup Milk Chocolate Chips
  • 16oz Dark Chocolate
  • 1 1/2 Soft Brown Sugar
  • 1/2 cup White Sugar
  • 2 cups Gluten Free Plain Flour
  • 1/2 cup Cocoa Powder
  • 10 tbsps Butter
  • 2 tsps Vanilla Essence
  • 2 tsps Baking Powder

  • In a medium bowl, whisk together the flour, xanthan gum, cocoa, baking powder and salt. Set aside
  • Melt the dark chocolate in a pan. Once melted completely, set aside to cool a bit
  • Beat the butter until smooth and creamy
  • Beat in the sugar until combined
  • Gradually beat in the eggs and vanilla
  • Add the melted chocolate and beat until combined
  • Add the dry ingredients mixture and mix just until combined
  • Stir in the milk and white chocolate chips
  • Cover and let stand at room temperature about 20-30 minutes. The dough consistency will become more fudgy
  • Preheat oven to 180°C. Line 2 sheets with baking paper
  • Scoop 12 cookies per large cookie sheet
  • Bake each cookie sheet for 15 minutes or until the edges of the cookies have just begun to set but the centres are still very soft
  • Cool the cookies on the sheets for about 5 minutes or until set, then transfer to cooling racks
